Maple Banana Baked Oatmeal Muffins

Want a quick and easy recipe for a breakfast on the go?

What about a nice little snack that can be tasty for both adults and kids alike?

I don't know about you, but I think maple and banana are a classic and delicious pairing and knowing that you are getting a great dose of fibre, protein and vitamins makes these muffins even more appealing!

These muffins just check off a lot of nutrition checkboxes in my box.

  • High in fibre from the whole grain oats and the flax meal

  • Dose of protein from the added whey as well as the eggs

  • Provide a good dose of energy-boosting carbohydrates

  • Incorporate a number of great vitamins and minerals from the oats, flax and fruit.

You what else is great about muffins?

Muffins are also a great vessel for a lot of unique and fun mix-ins and can be something that you and your kiddos (if you have them) can spend time making together. Get creative and toss in whatever your heart desires

  • Want a bit of tart in them? Try some dried cranberries

  • What about something to give you a bit chocolately goodness? Add some dark mini chocolate chips

  • Want to hide some veggies in your kids snacks/meals? Add some squash or pumpkin puree in place of 1/2 a banana.

The options are endless! What are your favourite things to throw into a good ol' muffin?
