Who wants to start their day off with carrot cake?
What about a healthy stack of carrot cake infused pancakes with heart healthy walnuts and a cinnamony-swirl cream cheese frosting?
A little while back Mukky and I stumbled upon BeyondYourself flavour infusers for protein powders and after a few tastes, we were sold.
I used the @beyondyourself_ carrot cake infuzer in my basic oatmeal pancake recipe and Mukky devoured them! 💪🏼
Without further ado, scroll down and lets get cooking! 👇🏼👇🏼
For the pancakes, dry ingredients: 🔹45 g oats blended 🔹1 tbsp coconut flour 🔹1 scoop @beyondyourself_ infuser 🔹1 tsp baking powder 🔹granulated sweetener to taste (stevia or whichever you like) 🔹pinch of pink salt
...Than add the following wet ingredients: 🔹3 tbsp unsweetened apple sauce 🔹2 egg whites (64ml) 🔹1/4-1/3 cup unsweetened almond milk
Mix those together and cook on a pan on medium heat. Cover the pan until they are golden on one side, flip and than cook uncovered until firm.
Add some toppings! 🔹Mix 2 tbsp light cream cheese with a cinnamon protein (or vanilla or just sweetener and extracts of choice) I used @cellucor Cinnamon swirl whey 🔹7g of walnuts
